Buffalo Chicken Sliders
Craving a really good Buffalo chicken cheesesteak sandwich? Every once in a while, I get a craving for one. While there are many options around me to choose from, I'm often hesitant, because most places use chicken "steak"... and to be honest, I'm not even sure what that is. Probably some form of heavily processed chicken-like substance! So to satisfy my buffalo chicken craving, I've put together this recipe. Using store-made rotisserie chicken and Rowan University President Houshmand's Hazardous hot sauce (http://www.rowan.edu/hotsauce/) this recipe is a healthier alternative to those sub shop chicken cheesesteaks.
Ingredients: (Makes two Sandwiches)
1 whole Rotisserie Chicken
1 cup (237mL) Shredded Fresh Mozzarella Cheese
1/2 cup (118mL) Ranch Dressing
2 Kaiser rolls or roll of choice
1/2 cup (118ml) President Houshmand's Hazardous hot sauce (our favorite)
1/2 cup (118ml) Hank's sauce
3 Tbsp (44mL) butter
3 Tbsp (44ml) Brown sugar
1 Tbsp (15ml) Honey
To Prepare:
Pre-heat oven to 350 degrees Farenheit (177 degrees celsius).
Pull apart your rotisserie chicken and shred with a fork. In a small pan, heat up hot sauces, add butter, brown sugar, and honey. Heat on low until all three ingredients are mixed together, and then add the rotisserie chicken. Coat Chicken in this Nastylicious buffalo sauce and set aside.
Put your rolls/buns into the oven for about 5 minutes to get them crispy. While you're waiting, in a new bowl mix ranch dressing and mozzarella cheese. Pull out the rolls and scoop about a quarter cup of chicken mixture on to the bun. Add about a 4 tablespoons of the cheese mixture and close the bun. Put into the oven for 5 minutes and then remove and enjoy!
